Ingredients
2 1/2 lbs ground beef
1 medium yellow onion, chopped if tolerated; may cause tummy troubles in infants if breastfeeding
4 cloves of garlic, minced
3 stalks of celery, thinly sliced
3 cups shredded carrots
2 cups peeled and diced celeriac
9 cups chicken stock or beef stock
24 ounces strained tomatoes
1 (18 ounce) jar of diced tomatoes
1 (15 ounce) can of kidney beans drained and rinsed
1 cup of fresh green beans trimmed and cut into 2 inch pieces
3 tablespoons white vinegar
2 tablespoons Italian seasoning
1 1/2 tablespoons sea salt, Celtic is my favorite
1 tablespoon dried parsley
1 tablespoon ground cumin
3/4 teaspoon cayenne pepper
1/2 teaspoon cracked black pepper
1/2 lbs yellow squash, halved lengthwise and thinly sliced into half-moons
1/2 cup chopped fresh basil, plus more for garnish
parmesan cheese for garnish
